What we have said about licensing is true. You can always call VMware customer support to clarify licensing questions, if you would like.
Sizing a server is not the same as just saying "oh we need a bunch of ram and as many cpus as possible". If you are set on the design you have in mind, then we have to assume I guess that you have evaluated disk IOPS and throughput requirements and that are certain that you do not need redundancy or flexible maintenance windows and that this "one big server" is going to be what you need.
